Rinse 2 cans of organic garbanzo beans under cool water in a strainer.
Set aside a 1/4 cup of garbanzo beans, for garnish.
Add the remaining garbanzo beans and garlic in blender and mix until smooth.
While chick peas continue to mix, add tahini, juice from lemon, salt, and ice cubes in the blender or food processor for 3-4 minutes.
Blend ingredients to desired thickness. Add cold water if needed to adjust creaminess.
Pour hummus into serving bowl. Swirl with a spoon.
Garnish with garbanzo beans, olive oil, and mint leaves.
