Take salmon out of the refrigerator and let stand for 10 minutes. Pat dry the salmon with paper towels. Season with sea salt and add a couple of dill sprigs to each salmon piece. Wash and dry the broccolini and Persian cucumbers. Cut 2 inch pieces of the broccolini (including stems). Small dice the cucumbers leaving the skin on.
Cook broccolini
In a medium size pan, add 1tbsp olive oil, and cook broccolini for 5-7 mins on medium heat or until desired texture.
Cook salmon
Broil salmon in heated oven for 11-12 minutes. Remove from heat and squeeze 1/2 lemon of juice on salmon. Cut other 1/2 lemon in slices for plate presentation. Enjoy with cous cous, and a side of your favorite salad. Twist: Add 2 cups of yogurt, sliced cucumbers, and chopped dill. Mix and season with salt and pepper for a delicious dipping sauce for your salmon and veggies!
Plate dish
In a flat serving dish, add the cooked salmon pieces along with the broccolini, and lemon slices. Enjoy!
