This traditional dish is filling and full of flavor, especially if you add the pine nuts. But our twist is the seven spice that includes: allspice, black pepper, cinnamon, ground cloves, cumin, ground coriander, and ground ginger. My favorite brand of seven spice is by ZiyadIf you don't have seven spice you can simply use cumin, cinnamon, salt and pepper and it will still taste delicious! In a large strainer, add rice in cold water and let it rinse for 5 minutes (or until water runs clear).
COOK MEAT
Set the Instant Pot setting to "Sauté". Add 1 Tbsp. of olive oil, cook red onions, the organic lean ground beef and the spices. Keep this setting until the meat is cooked to desired taste. Follow the same instructions if cooking in a pot.
In a small pan, heat 1 Tbsp. olive oil on medium-high heat and sauté vermicelli noddles until golden brown.
COOK RICE
Drain water from rice. Pour the soaked rice on top of the meat. Season the rice with sea salt. Add in the vermicelli noodles. Add 2 cups of water (tip: or 1:1 ratio for the amount of rice you are using ex. 1 cup rice to 1 cup water). Gently mix the ingredients with a large spoon. Set the Instant Pot setting to "Rice ". Cover and let cook (approx. 12 min). Let pot naturally release for 10 minutes, then move release value to “vent”.
ASSEMBLE RICE BOWL AND GARNISH
Take rice and meat combination out and plate it in a large flat serving dish. Garnish with parsley, toasted pine nuts and almonds. Serve with a side of yogurt and you're set for your special Mediterranean dining experience!
