This is one of my favorite dishes to make! Not only is it delicious and nutritious (high in omega 3s) but it doesn't take much effort in the kitchen and is a great dinner to enjoy with family and friends. It all comes together in less than 1/2 hour, and you can add a simple side salad, rice or spiced turmeric couscous (as shown in the picture) to create the perfect meal! Oh, and for the twist, I've added instructions on to create a special yogurt, cucumber and dill sauce to serve on the side!What is the best salmon to use? Well you can use wild-caught salmon, however, we typically eat Atlantic farm-raised salmon from Wholefoods which is responsibly farmed. We keep the skin on, which makes it easy and quick to season and cook!Salmon is my favorite for a reason. This is definitely a family staple and whenever we cook fish, my family asks for this recipe! Salmon Broccolini and Dill
Ingredients
- 4 fillets Salmon
- 4 sprigs Fresh Dill
- 1 bunch Brocollini
- 1/4 cup Pine Nuts
Twist
- 2 cup plain yogurt
- 2 chopped persian cucumbers
- 1 sprig chopped dill
Instructions
Preheat oven
- Set to broil or 550 degrees F.
Prepare ingredients
- Take salmon out of the refrigerator and let stand for 10 minutes. Pat dry the salmon with paper towels. Season with sea salt and add a couple of dill sprigs to each salmon piece. Wash and dry the broccolini and Persian cucumbers. Cut 2 inch pieces of the broccolini (including stems). Small dice the cucumbers leaving the skin on.
Cook broccolini
- In a medium size pan, add 1tbsp olive oil, and cook broccolini for 5-7 mins on medium heat or until desired texture.
Cook salmon
- Broil salmon in heated oven for 11-12 minutes. Remove from heat and squeeze 1/2 lemon of juice on salmon. Cut other 1/2 lemon in slices for plate presentation. Enjoy with cous cous, and a side of your favorite salad. Twist: Add 2 cups of yogurt, sliced cucumbers, and chopped dill. Mix and season with salt and pepper for a delicious dipping sauce for your salmon and veggies!
Plate dish
- In a flat serving dish, add the cooked salmon pieces along with the broccolini, and lemon slices. Enjoy!
