Are you looking for a new and delicious summer salad recipe? Well, here it is! This Mediterranean Tomato Salad is simple and perfect! Cherry tomatoes are combined with fresh mozzarella and basil, red onions, a light homemade raspberry vinaigrette and chickpeas for a protein punch!
This salad is perfect to share at a BBQ, picnic, or any kind of summer parties.
This post was inspired by my love for salads, and pairs well with so many different dishes such as chicken, fish or topped on toasted breads! You can even serve it with couscous or with a middle eastern rice dish such as this Lebanese Hashweh!
Ingredients
- cherry tomatoes cut in halves
- fresh mozzarella balls
- fresh organic basil leaves chopped or chiffonade
- kosher salt
- olive oil extra virgin
- sumac (optional)
- lemon squeezed
- red onion diced
- chickpeas

- Trader Joe's organic raw raspberry vinegar

Instructions
For the dressing, mix olive oil, lemon, raspberry vinegar, salt, and sumac (optional) in a small bowl and whisk. In a large bowl, add halved cherry tomatoes, diced onions, chopped basil, fresh mozzarella and chickpeas. Add dressing on top and mix when ready to serve.
Hint: Add kosher salt directly onto the cut cherry tomatoes to bring out the ripe delicious fresh flavor!
Substitutions
- basil - instead of basil, you can use parsley
- chickpeas - use avocado instead for a healthy high nutrient dense ingredient
- cherry tomatoes - use roma tomatoes or tomato medley for more vibrant colors
Storage
Store salad in the refrigerator in an airtight container. Good for 2-3 days.
Top tip
Make dressing ahead of time, store in a separate container, and add when ready to serve.

- 2 tbsp olive oil extra virgin
- 1/2 tbsp sumac optional
- 1 lemon squeezed
- 1/2 red onion diced
- 1 can chickpeas rinsed
