What is Chimichurri you ask? It’s a delicious garlic and tangy oil-based herb sauce that goes on top of meats, roasted veggies or tossed in a salad! It is simply so flavorful and versatile with only a few ingredients mixed together!

Mediterranean Style Chimichurri Sauce
Mediterranean variation of the traditional chimichurri sauce. Chimichurri is a special sauce of Argentine origin, used as a topping for grilled meats. This delicious variation can be topped on chicken kebabs, kefta, kobee and roasted vegetables.
Ingredients
- 1/4 red onion finely chopped
- 2 cloves garlic
- 1 jalapeno, deseeded and finely chopped
- 1/2 cup red wine vinegar
- 1 tsp kosher salt
- 1 sprinkle red pepper flakes
- 1/2 cup finely chopped parsley
- 1/2 cup finely chopped cilantro
- 3/4 cup extra-virgin olive oil
Twist
- 2-3 sprigs fresh mint
Instructions
- Step 1 Combine red onions, jalapeños, garlic, vinegar, and 1 tsp. salt in a medium bowl. Let sit 15 minutes.
- Step 2 Stir in finely chopped parsley, cilantro, and mint. Using a fork, add in olive oil and whisk until blended. Cover in airtight container and chill at least 3 hours or up to overnight.
Twist
- add a small sprinkle of red pepper flakes and sprig of mint on top as garnish!
