One of my favorite veggies to grill is zucchini. It’s so versatile and cooks within minutes! This recipe can be made on an outside grill or a grill pan for those days you don’t feel like firing up the grill. We love using this new kitchen gadget from Lodge and are super excited to try out more grill recipes and share with you.
This recipe is simple. Takes about 10 mins to cook from start to finish. And is a sure appetite pleazer! Serve as a main veggie dish with couscous or as a side dish with meats if you choose. You can dress it up with your favorite tahini sauce or balsamic vinegar. Enjoy!
Grilled Zucchini with Feta and Herbs
Grilled Zucchini with Feta and Herbs
Ingredients
- 4-6 zucchini
- 1/2 tbsp olive oil
- 1 sprinkle kosher salt
- 1 sprinkle black pepper
- 1 sprig fresh mint
- 1/2 cup parsley chopped
- 1/2 cup crumbled feta cheese
Twist
- 1 dash sumac
Instructions
HOW TO MAKE GRILLED ZUCCHINI WITH FETA AND HERBS
- Use an outside grill, or grill pan to cook the zucchini. Cut zucchini ends and slice length-wise into 1/4 inch pieces. Brush the slices on both sides with olive oil and place slices on the grill. Cook for 1-2 minutes on each side.
- Remove zucchini to a serving plate, and sprinkle sliced garden tomatoes, crumbled feta cheese, mint, parsley and add salt and black pepper on top.
- Drizzle some olive oil, and add a pinch of zumac for a lemony Mediterranean flavor! Serve with tahini dipping sauce and enjoy!

Love this recipe for an easy grilled side dish. Super yummy, fresh and quick.
My twist: I like to add a few dashes of Tajin for a bite of spice, lemony salt and pretty color.

I love zucchini, and this dish just deepens my love. Since half of us aren't into feta, we did half with Mexican queso fresco.
