You all know that I love following the latest food trends! Well hello to my version of the Feta pasta. Introducing my Mediterranean Spaghetti Pasta with a Twist! My kids love spaghetti. Let me say that again... MY KIDS LOVE SPAGHETTI! This dish took me a total of 15 mins to make and is a sure winner and family night pleaser.
Mediterranean Spaghetti Feta Pasta
Ingredients
- 1 box Barilla Spaghetti
- 4-5 tbsp olive oil
- 3-4 cloves garlic
- 1/4 cup pitted black or green olives, halves
- 12 ounce tomato medley
- 1/2 tbsp sea salt & black pepper
- 8 ounce good quality feta cheese!
- 1 sprig basil & mint
Twist
- 1 sprinkle za'atar
Instructions
- Follow package instructions to cook spaghetti pasta in boiling water and salt. I like my pasta al dente (so it took less than 10 minutes to cook).
- Heat the olive oil in a skillet over medium heat. Add garlic and a pinch of salt. Cook for 10 seconds, stirring regularly. Add tomatoes, olives and some crumbled feta over low heat until just warmed through, about 30 seconds or so.
- Drain pasta (saving some pasta water for flavor) and return to its cooking pot. Pour the warmed olive & feta sauce in and toss to coat thoroughly. Add salt and black pepper and toss again to coat.
- Serve immediately and top with more crumbled feta, basil & mint! Add a twist by sprinkling some green za'atar!

I have one picky eater, but pasta is something everyone loves. So we eat lots of pasta. But it can get boring when it's in rotation so often. I love this twist, it's so light and fresh.
