Grilled Mediterranean Style chicken is a must-have recipe that has very basic ingredients, but is so rich in flavor! The chicken is made with a lemony tasting marinade which includes fresh lemon juice, garlic, olive oil, salt, pepper and shawarma mix (black pepper, paprika, cardamom, cumin, nutmeg, cloves and cinnamon).
Pair it with a delicious side salad, grilled veggies or couscous for a healthy twist!

Homemade Shawarma Spice
• 2 tbsp sweet paprika
• 1 tbsp allspice
• 2 tsp cumin
• 2 tsp turmeric
• 1 tsp cinnamon
• ½ tsp ground ginger
• ½ tsp Aleppo pepper or hot pepper flakes (optional)

Ingredients
- 6 pieces chicken thighs
- 2-3 cloves garlic
- 1 tbsp chicken shawarma spice mix
- 1 tbsp olive oil
- 1 juice lemon
- 1/2 tsp kosher salt
- 1 dash black pepper

- 1/4 tsp aleppo pepper
Instructions
HOW TO MAKE GRILLED MEDITERRANEAN STYLE CHICKEN
- Pat chicken thighs dry. Add chicken in a large bowl and top with olive oil, lemon juice, garlic, shawarma spice, salt and pepper. Toss and combine ingredients, and marinate in an airtight container or resealable freezer ziplock for 3-4 hours, or at least 30 minutes.
- Set grill or grill pan to medium heat and cook for about 7 minutes on each side. Make sure you use tongs and flip over until fully cooked and juices run dry.
- Sprinkle with fresh parsley, and add lemon wedges for garnish. Add a dash of aleppo pepper for a kick! Serve with a simple and refreshing salad like tomato and mint!

I love anything on the grill - and especially love chicken thighs. I usually cook in the instant pot as part of some 'comfort food' dish vs on their own as a center of plate protein. This recipe taught me otherwise!
