Pesto Ricotta Avocado Egg Toast
If you know me, you know I love food trends! Here's another TikTok trend that has gone viral! I was inspired by the Mediterranean flavors and added my spicy twist! I also wanted to be fancy and added a drizzle of honey for a taste of sweetness. I made this for Gilbert for an early lunch and it tasted like we went to a gourmet restaurant for brunch! It has a hearty combination of protein, and healthy fats to get your day going. Oh my goodness... it's simply delicious!
Ingredients
- 1 tbsp pesto sauce
- 1 slice rye bread
- 1 egg
- 1 tbsp ricotta cheese
- 1/4 avocado
- sprinkle salt & pepper
Twist
- sprinkle Aleppo pepper
- 1/2 tsp organic honey
Instructions
- Heat skillet over medium heat and add 1 tbsp pesto sauce on pan for about 30 seconds.
- Add two eggs on top of pesto, add salt and pepper and cook until desired texture.
- Toast rye bread. Spread ricotta cheese evenly on slice and then add avocado on top.
- Once eggs have cooked to desired temperature, add on top of the rye slice.
- Drizzle honey on top
Twist
- add a dash or two of aleppo pepper!
